We had a wonderful time at our June Vegan Potluck. 30 people attended and enjoyed wide variety of vegan dishes.

Amazing Power of Plant-Based Diet To Heal the Body

Our speaker was Terri Matthis Edwards, and she talked about “The Amazing Power of Plant-Based Diet To Heal the Body.”

Terri talked about her own health journey, as she struggled with acne, high cholesterol, chronic inflammation, joint and muscle pain and more. All of this gradually changed as she switched to a plant-based vegan diet. She also lost 50 pounds.

Terri showed some before and after photos, including one of her sister who went plant-based vegan and lost weight. Terri says her sister was a challenge because she hated vegetables. So they initially sat down and made a list of all the vegetables she liked, and focused on them. Now Terri’s sister is trying vegetables that she originally hated, such as cauliflower. Evidently, her palate and taste preferences changed. Now she likes cauliflower and other veggies.

Terri Edwards is the blogger behind EatPlant-Based.com, a licensed Food for Life instructor with Physicians Committee for Responsible Medicine, and a plant-based speaker. Her personal mission is to promote the power of food for restored health and see lives changed.
